Spicy Grilled Chicken Breast with Veggies

Ingredients:

  • 2 chicken breasts (about 200g each)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 200g mixed bell peppers (red and yellow), sliced
  • 100g zucchini, sliced
  • 1 teaspoon dried oregano
  • Juice of 1 lemon

Kitchen Tools Needed:

  • grill pan
  • mixing bowl
  • meat thermometer
  • tongs

Instructions:

  • In a mixing bowl, combine olive oil, smoked paprika, cayenne pepper, salt, and pepper.
  • Add chicken breasts to the bowl and coat them well with the marinade. Let it sit for about 10 minutes.
  • Preheat the grill pan over medium heat.
  • Grill the chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F).
  • While the chicken is cooking, toss the sliced bell peppers and zucchini in olive oil, oregano, salt, and lemon juice.
  • Add the veggies to the grill pan during the last 4 minutes of cooking, grilling them until tender and slightly charred.
  • Remove the chicken and veggies from the grill and let the chicken rest for a few minutes before slicing.
