Spicy Grilled Chicken Breast with Veggies
Ingredients:
- 2 chicken breasts (about 200g each)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 200g mixed bell peppers (red and yellow), sliced
- 100g zucchini, sliced
- 1 teaspoon dried oregano
- Juice of 1 lemon
Kitchen Tools Needed:

Instructions:
- In a mixing bowl, combine olive oil, smoked paprika, cayenne pepper, salt, and pepper.
- Add chicken breasts to the bowl and coat them well with the marinade. Let it sit for about 10 minutes.
- Preheat the grill pan over medium heat.
- Grill the chicken breasts for about 6-7 minutes on each side or until the internal temperature reaches 75°C (165°F).
- While the chicken is cooking, toss the sliced bell peppers and zucchini in olive oil, oregano, salt, and lemon juice.
- Add the veggies to the grill pan during the last 4 minutes of cooking, grilling them until tender and slightly charred.
- Remove the chicken and veggies from the grill and let the chicken rest for a few minutes before slicing.
